I think apple cider is the best part of fall. Warm or cold, I'm always up for a cup of apple cider.
This apple cider jelly recipe tastes like apple cider in a delicious spread. It's easy to make with apple cider or even apple juice.
I make low sugar Sure Jell apple cider jelly to reduce the amount of sugar in the recipe. I usually have this in yogurt or on toast, so I don't need the extra calories.
This spiced apple cider jelly recipe is similar to my old fashioned apple and mint jelly but I use spiced apple cider instead.

Can I Use Apple Cider in Canning?
Yes, you can absolutely use apple cider to make low sugar Sure Jell apple cider jelly. Apple cider is a high acid food, so it can be safely canned without adding sugar or lemon juice.
You'll simply substitute apple juice for apple cider to make apple cider jelly. Since I'm extra, I like to add some spices.
How Long Does it Take for Apple Cider Jelly Canning to Gel?
It can take 24 to 48 hours for your apple cider jelly recipe to fully gel. Making jelly and jam takes patience.
How Do You Thicken Apple Jelly?
I don't add anything new to approved canning recipes like this spiced apple cider jelly recipe. If it doesn't set up, then I fix it after I open it (more on that below).
I do want to note that this is a low sugar Sure Jell apple cider jelly, so you have to use low sugar pectin. Pectin needs sugar to gel, but low sugar formulas are formulated to use less sugar.

What Can I Do if My Apple Cider Jelly Doesn't Set?
I'd just use it as an apple cider syrup. However you can save it. Some people open all of the jars and reprocess it.
I put it on the shelf and fix it by the jar. It's a bit of a pain, but we have a major lid shortage so this works for now.

Can You Recook Jelly That Didn't Set?
Yes, you can recook this spiced apple cider jelly recipe if it doesn't set up. Before you do this, I recommend letting the jars sit on the counter for 48 hours. Then place one jar in the fridge for a day.
If it's still runny, then proceed with recooking it. Here's how to recook jelly that didn't set:
- Open all of the jars and measure how much jelly needs to be cooked.
- For each quart of jelly, you will need 1/4 cup water, 1/4 cup sugar, 2 tablespoons lemon juice, and 4 teaspoons regular pectin powder.
- Place the jelly, water, sugar, lemon juice, and pectin in a large pan and stir. Bring it to a rolling boil over high heat for 1 minute. Stir constantly.
- After one minute of boiling, place some jelly on a cold spoon from the freezer. If it thickens, you can recan the apple cider jelly.
Can You Use Cornstarch to Thicken Jelly?
Yes and no. Cornstarch is a good thickener for jams and jellies, but it's not safe for canning. I don't recommend using cornstarch if you are making an apple cider jelly canning recipe.
However, if your jelly didn't set and you want to thicken it before using, then you can heat the jelly and add cornstarch. You can then store it in the fridge, but don't can it.
How Do I Know When My Apple Cider Jelly is Done?
To test this low sugar Sure Jell apple cider jelly, place a place or a spoon in the freezer while you prepare the jelly. Then put some jelly on the spoon or place and place it in the freezer for a minute.
If the jelly forms a wrinkle when you push on it, then you jelly is done and ready to can.
Can You Keep Jelly at Room Temperature?
Unopened jars of jelly can be kept on the shelf at room temperature. However, you should refrigerate this spiced apple cider jelly recipe after opening.
How Long Does Apple Cider Jelly Last?
If properly canned, your apple cider jelly canning recipe will last about a year on the shelf. Once opened, store in the fridge for up to a month.
Can I Freeze Sure Jell Apple Cider Jelly?
Yes, you can absolutely freeze a spiced apple cider jelly recipe. Use freezer containers and leave some headspace for expansion.

If you want to make spiced apple cider jelly, you can cook the apple cider with spices. Then strain out the whole spices and use the apple cider.

How to Use Apple Cider Jelly
Here are some ways to use your apple cider jelly recipe:
- Add to Instant Pot cold start yogurt.
- Drizzle over ice cream.
- Add to oatmeal.
- Use on biscuits.
- Use apple cider jelly instead of strawberry jelly for these air fryer pop tarts.
- Spread on sourdough starter pancakes or waffles.
Apple Cider Jelly Canning Ingredients
To make a low sugar Sure Jell apple cider jelly, you will need:
- Apple cider
- Low sugar pectin
- Sugar
- Ground cinnamon
- Nutmeg
- Allspice
- Cloves
How to Make Low Sugar Sure Jell Apple Cider Jelly
Step #1
Place the apple cider and spices in a large pan. Heat over medium heat until it starts to bubble. Then reduce heat and let simmer for at least 5 minutes.
Step #2
In a separate bowl, combine 1/4 cup sugar and the low sugar pectin. Add to the apple cider. You can add a teaspoon of butter to reduce foaming.
Step #3
Cook over high heat and bring the apple cider jelly mixture to a full boil that can't be stirred down. Stir constantly. Add the rest of the sugar and bring to a boil again for 1 minute. Stir constantly. Remove from heat and skim off foam.
Step #4
Ladle into prepared jars with a 1/4 inch headspace. Wipe the jar ips and place lids and bands on jars. Process in a water bath for 5 minutes. Remove jars and place on a towel to cool completely.
Let sit for 24 hours before moving or touching. It can take 2 or more days to completely jel.
